Light and Fresh Apple Coleslaw

This simple slaw is a breeze to throw together. The light dressing and apples give it just the slightest hint of sweet. It has a nice crunch as is perfect on its own and even better piled on pulled pork!

Isn’t this time of year so interesting to cook for?  The fact that school is back in session, the apples are ripening and football is on makes you want to cook lovely warm fall food.

The problem is, it is still hot outside!  This slaw helps bridge the gap.  It uses some of those favorite fall flavors of honey, apples and mustard and puts them in a fresh salad that is still perfect for a hot day.

The best part this salad comes together in a few minutes.  I like it best if it sits in the refrigerator for an hour or two to soften up the cabbage, but the actual hands on time is only cutting and apple and mixing it all up.

Do that during nap time and it will be perfect for dinner.  You know what I’m talking about!

This slaw is one of those dishes that makes a great side dish. Maybe you’ll serve it with grilled chicken or a nice pork chop.

But out favorite way to serve it is on top of apple cider pulled pork.  Do yourself a favor and serve that pulled pork on top of an apple cider waffle and pile this slaw on top of it all.

Of course the pulled pork would be at home on a pretzel roll with some slaw as well.  No matter what combination you decide to go with, just give it a try.

My husband is usually not a slaw fan, but actually went back to get more slaw to pile on top of his plate.  He took the first two bites and decided it was worthy of more of his appetite!

After dinner he kept saying how amazed he was that he liked it.  He saw the slaw and waffles and didn’t have high hopes.

But he knows to at least give whatever strange concoction I’ve come up with a try. He did and he was quite pleased!

If you like trying different variations on slaw, you’ll have to check out coleslaw with condensed milk dressing as well. It is creamy, but doesn’t have any mayonnaise in it!

Ingredients

  • 4 Tablespoon honey
  • 4 Tablespoon apple cider vinegar
  • 1 Tablespoon grainy mustard (I used stone ground honey mustard)
  • 1 teaspoon salt
  • 2 Tablespoon mild flavored oil (vegetable, canola etc.)
  • 1 pound bag coleslaw mix
  • 1 large apple, chopped

Instructions

  1. Whisk together honey, vinegar, mustard, salt and oil.
  2. Stir in coleslaw mix and apple, tossing to coat.
  3. Refrigerate for at least an hour, stirring occasionally to keep the dressing distributed.
  4. Serve cold
