Banana Sheet Cake with Peanut Butter Icing

This banana sheet cake is topped with a glossy peanut butter icing. It would be delicious if you stopped there, but to make it an ode to Elvis himself we added some chopped bacon and a drizzle of honey. This cake is a fun way to turn the King’s favorite sandwich into a really fun sheet cake.

If you are a fan of Elvis’s favorite sandwich, you are going to love the sweet and salty combo of this banana cake with peanut butter icing and crumbled bacon. It sounds a little bit crazy, but it tastes amazing.

The banana sheet cake whips up quickly and is topped with a pour over peanut butter icing.  You can stop there if the bacon sounds like too much, but to give it that Elvis touch we suggest you go the whole way with crumbled bacon and a drizzle of honey.

I have had this idea in my head for a while now.  Have you ever just stewed on something you want to make like that?

I have been so anxious to make it, but haven’t had the right opportunity.  I try not to make desserts for just the three of us.

My husband usually doesn’t eat dessert multiple days in a row.  I however have no problem eating dessert multiple meals in a row…. it’s a gift.  Try not to be too jealous!

Anyway, for my own preservation (and sanity) it is best if I make desserts when there are other people around to share.

Do you feel me?  I can’t be alone when I say my sweet tooth has a mind of its own.  It is quite persuasive and who am I to object to its needs?

Luckily, we have “family dinner” with my parents and siblings every Saturday. So, I have plenty of opportunities to make and share desserts.

Of course the inspiration for this cake is the famous Elvis sandwich.  So I used some ripe bananas to make a sheet cake.

Then I made a Texas sheet cake style peanut butter icing. I love how easy they are because you just pour them over the cake.

It really would be delicious just like that, but to take it to the next level I added bacon and a drizzle of honey.  It helps add layers of flavor and a bit of that sweet and salty finish.

Little Dude was my big kitchen helper for this recipe as well.  He dumped the ingredients in the mixer bowl, made sure the mixer didn’t go anywhere while in operation and of course licked the beaters!

Everyone wrinkled their nose a bit at the idea of it, but nobody has had trouble finishing their piece.  

In fact, my siblings all took an extra piece home with them.  The rest of the cake was quickly eaten by the friends and family the next day.

So, I would say it was a hit! Of course, you can leave the bacon and honey off if you really can’t stand the idea of it.

Alternative topping ideas for your banana sheet cake

Not feeling the bacon and honey topping on this cake? Don’t let that deter you. You can eat it without or add some of these other fun ideas:

  • chopped peanuts
  • broken up pieces of banana chips
  • sprinkles
  • mini chocolate chips

Mash Those Bananas!

Make sure your bananas are mashed well. Banana cake recipes are developed to use the moisture from the fruit as part of the mix. Making sure your bananas are mashed smooth will give your cake the best texture.

Banana Sheet Cake with Peanut Butter Icing, Bacon and Honey

Ingredients 

Cake

  • cup milk
  • 1 teaspoon white vinegar
  • 1⅔ cup granulated sugar
  • cup butter
  • 3 large bananas very ripe
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • cups all purpose flour

Peanut Butter Icing

  • ½ cup butter
  • cup creamy peanut butter
  • 1 cup milk
  • cups powdered sugar
  • 1 teaspoon vanilla extract

Toppings

  • 4 Tablespoons chopped crisp bacon optional
  • 2 Tablespoons honey optional
Makes: 13 x 18inch rectangle1inch height

Instructions 

Cake

  • Preheat the oven to 350°F and spray a 13×18″ half sheet pan.
  • Mix ⅔ cup milk and 1 teaspoon white vinegar, set aside
  • In mixer bowl, cream ⅓ cup butter and 1⅔ cup granulated sugar.
  • Add 3 large bananas, 2 large eggs & 1 teaspoon vanilla extract and mix until smooth.
  • Stir 2¼ cups all purpose flour, 1 teaspoon baking soda, and 1 teaspoon salt into banana mixture. Add milk mixture and stir until just combined.
  • Spread in prepared sheet pan and bake for 25-30 minutes, rotating half way through bake time. Remove from oven and frost while warm.

Frosting

  • In a saucepan, cook ⅔ cup creamy peanut butter, ½ cup butter and 1 cup milk over medium low heat until it starts to bubble. Be sure to stir constantly.
  • Add the 2½ cups powdered sugar and whisk well until all lumps are gone. Remove from heat and stir in 1 teaspoon vanilla extract.
  • Pour over warm cake and spread slightly. Sprinkle with 4 Tablespoons chopped crisp bacon and/or drizzle with 2 Tablespoons honey if desired.
  • Cool completely before serving.

  2. Hi Carlee, I'm with you on the dessert front. When I go out to eat I always browse the dessert section and choose my main meal around that. It's bad, but it's me. I don't often make dessert at home, but if I make cakes I like to freeze slices to have when I fancy a slice… Would this freeze okay? Probably not with the icing?… This sheet cake does sound a very interesting combination of flavours and it's one I would like to try. Walking season is nearly here and I do have a few walking friends who are also partial to a slice of cake – what more can a girl ask for?

    1. I haven't tried freezing an icing like this, but I think it might hold up ok. My sweet tooth definitely gets the best of me too, so having people to help eat the treats definitely helps!
