Crockpot Turkey and Stuffing Casserole

This crockpot turkey and stuffing casserole is a whole meal in one. The easy comfort food meal is sure to be a hit with your busy family.

Plate with big serving of casserole with chunks of turkey and mixed veggies in a creamy sauce topped with stuffing, ready to eat.

In my world, crockpot recipes are timeless and seasonless. While the comfort food meals they tend to make are certainly extra cozy during the fall and winter, they have their merits during the summer too.

For one, you don’t have to turn on the oven. Also, when the days are long and busy, dinner can be ready when you are.

This turkey and stuffing casserole definitely screams fall to me though. As we start to slide into the holiday season, turkey is on my mind.

This is such a fun way to get some of the flavors of Thanksgiving with none of the stress and pressure. Tender turkey cooks in a flavorful sauce with veggies in a mixture that is almost like a pot pie filling.

It is all topped with some stuffing to tie it together. That is so much easier than making a pie crust, and again you don’t even have to turn on the oven.

The mix of flavors and textures is wonderful. It is a great way to use up some leftover turkey (or chicken!)

For a slightly smokey flavor, use some leftover smoked turkey breast. It is wonderful in this.

If you don’t have any leftover turkey or chicken, use a rotisserie chicken.

Easy Substitutions:

No cream of celery? Swap for cream of chicken or cream of mushroom.

No canned potatoes? Use cooked diced fresh potatoes or throw in a handful or two of frozen southern style hashbrowns.

No turkey gravy packet? Substitute with chicken gravy mix or even a homemade gravy if you have some on hand.

No heavy cream? Use half-and-half, evaporated milk, or a little extra stock for a lighter version.

Cheesy twist: Stir in ½ cup shredded cheddar or Swiss cheese into the filling before topping with stuffing.
