This turkey and stuffing casserole is a great way to use up Thanksgiving leftovers. You can also use cooked chicken if you don't have turkey. It only takes a few minutes to put together and is a fabulous comforting meal.

Instructions
Spray your crockpot insert with nonstick cooking spray.
Place the 2 cups leftover turkey, 2 cups frozen mixed veggies and 15 ounce can diced potatoes in the crockpot and stir to mix.
Whisk together the 10.5 ounce can cream of celery, 1 ounce envelope turkey gravy, 2 cups chicken stock, 1 teaspoon poultry seasoning, and ½ cup heavy cream in a bowl. Pour over the turkey and veggie mixture.
Top with the prepared stuffing mixture.
Cover and slow cook on low for 6 hours or high for 4 hours.
Fluff the stuffing a bit with a fork and then serve.
Notes
If you have leftover stuffing, use it in place of the mix.Try making this recipe with chicken instead of turkey.Serve the casserole with some cranberry sauce for the full holiday meal experience.
