Cornflake Brittle

Crunchy cornflake brittle has all of the buttery brown sugar goodness you would want in a candy. The chocolate is optional but highly encouraged. We dressed ours up for Christmas, but you can customize it however you would like.

The recipe for cornflake brittle has been going crazy on TikTok. As soon as I saw it, I knew I had to make it.

It has so much in common with so many recipes we love. Of course, the name evokes peanut brittle, which is one of our favorite homemade candies.

The butter and brown sugar mixture reminds me a bit of cracker toffee that is popular around the holidays, too. Especially when you top it with a layer of chocolate.

Luckily, we normally have a box of cornflakes around anyway. We love making peanut butter cornflake bars and no bake cornflake wreaths.

Obviously, I am always stocked with butter and brown sugar, too. So this cornflake brittle can be made at a moment’s notice.

That is wonderful! Though my jeans should be worried. 😉

The brittle is good on its own, but it goes really well with chocolate. So, we highly recommend at least a little bit.

Use your favorite chocolate. A good melting chocolate makes it easy, as you don’t have to temper it.

If you want to use less chocolate, just melt some and drizzle it over the cornflake brittle. That way, you can have a little bit in every bite but still really taste the buttery brown sugar goodness underneath.

The candy melt drizzle is fun for the holidays, but obviously, you can skip it. Or use different colors to match the occasion.

You can also sprinkle chopped nuts over the chocolate while it is still warm. Some toasted pecans would be lovely.

A sprinkle of sea salt is another tasty topping idea. There is something about that sweet and salty combo.

Store leftovers in an airtight container at room temperature for up to 7 days. Putting this candy in the refrigerator or freezer is not recommended.

Cornflake Brittle

Crunchy cornflake brittle has all of the buttery brown sugar goodness you would want in a candy. The chocolate is optional, but highly encouraged. We dressed ours up for Christmas, but you can customize it however you would like.

Ingredients 

  • 3 cups cornflakes
  • ½ cup butter
  • ½ cup light brown sugar packed
  • 1 pinch salt
  • ½ pound melting chocolate
  • ½ cup red candy melts packed
  • ½ cup green candy melts packed
  • Christmas sprinkles optional

Instructions 

  • Preheat the oven to 350℉. Line a sheet pan with parchment paper and set aside.
  • Put the 3 cups cornflakes in a large mixing bowl.
  • Put the ½ cup butter, ½ cup light brown sugar, and 1 pinch salt in a heavy bottomed saucepan over medium heat.
  • Cook, stirring frequently, until the butter is melted. Allow the mixture to come to a simmer, then let it simmer for 2 minutes. The brown sugar should be dissolved and the mixture should be a bit glossy.
  • Immediately pour the hot brown sugar mixture over the cornflakes. Stir until they are coated, then spread them in an even layer on the lined baking tray.
  • Bake for 12-15 minutes until just golden brown.
  • Melt the ½ pound melting chocolate in a microwave safe bowl using 30 second intervals until you can stir it smooth. Spread the chocolate over the brittle. (This is the time to add a sprinkle of sea salt or chopped nuts if you want to go that route.)

  • If desired, melt the candy melts, one color at a time and drizzle over the chocolate. If you work quickly, you can use a knife to swirl the chocolate around a bit. Feel free to toss on some festive sprinkles as well.
  • Allow to cool completely and let the chocolate set up before breaking it into pieces. Store in an airtight container at room temperature for up to 1 week.
