Leftover ham is too delicious to waste. The pretty slices make great sandwiches, but what should we do with the not so pretty hunks that are left?
There are so many great options, but this ham and noodle casserole with broccoli and cheese is one of our favorites.
To be honest, we didn’t technically have any leftover ham after Easter. I made the scalloped pineapple and some cookie bars, but was not in charge of the meat.
A few days later I saw the hams on super sale at the store though and couldn’t pass them up. In fact, I already had planned to get one if they had any left.
I just love picking up stuff like that, especially when it’s something like ham that has a little longer shelf life.
Of course we had a ham dinner, but we were really after the leftovers. I cut as many thin slices as I could for sandwiches.
My husband eats a sandwich for lunch every day during the week and it’s always extra good when we have leftover turkey or ham instead of lunch meat.
We also made a delicious mushroom risotto and threw in ham and peas to make it a full meal. Then we made this casserole based on the recipe for grandma’s chicken and broccoli casserole.
MiMi had made a ham version of that casserole a couple of months ago and I thought that was genius. Broccoli, ham and cheddar just go so well together, so it makes perfect sense that I liked it so much.
Little Dude and my husband are big fans of the chicken version, so I knew they’d be on board too. Of course they were happy campers when it showed up on the table.
We still have a little bit of ham left, so now the conundrum is what else to make? Maybe mini ham and cheese quiche? Oooh, or a ham and asparagus frittata. YUM!
My husband’s favorite ham, broccoli and cheese pot pie? Something more simple like ham and egg salad sandwiches? Or a new recipe?

Cheesy Ham and Broccoli Noodle Casserole
Ingredients
- 8 ounces egg noodles
- 3 Tablespoons butter
- 1 onion chopped
- ½ cup all-purpose flour
- 1½ cups chicken broth
- ¾ cup milk
- 5 cups diced ham
- 12 oz package frozen broccoli thawed
- 2 cups shredded cojack or cheddar cheese
Instructions
- Preheat oven to 400°F and grease a 9×13 pan
- Boil noodles according to package directions to al dente, then drain and pour into greased baking dish.8 ounces egg noodles
- Melt butter in a saucepan. Cook onion in butter until tender. Add flour and cook for a minute or two.3 Tablespoons butter, 1 onion, ½ cup all-purpose flour
- Pour the chicken broth into the pot while stirring. Add the milk and continue to cook until it begins to thicken, stirring frequently.1½ cups chicken broth, ¾ cup milk
- Spread ham and broccoli over noodles, then pour the sauce over the top of it. Sprinkle with cheese.5 cups diced ham, 12 oz package frozen broccoli, 2 cups shredded cojack or cheddar cheese
- Bake for 20 minutes or until bubbly and cheese is melted.

Made this today and it basically came out of the oven as a big sheet of béchamel laying on top of everything. It could be because I shredded a block of Swiss cheese and that kept everything from melting into the noodles? I've put it all in a pot now and I'm adding more stock and mixing it all together. I love that each step of the recipe has the ingredients below it; reading this recipe on a phone, it means I didn't have to keep scrolling up to see the ingredients. Thanks for that, it's awesome! Looking forward to trying more recipes!

That is strange! I wonder if the cheese did make a barrier. I'll bet it will be good with the cheese melted and more stock.

Delicious. I made half a recipe (that was all the ham I had) and added a clove of garlic, black pepper and a tsp of dried mustard to the sauce. I will definitely make this again.

This recipe might just be the way for us to compromise on broccoli. Surprisingly, I am fussier than husband when it comes to broccoli :)
