Summer is the time for no bake desserts. It is nice to be able to satisfy your sweet tooth without having to heat up the kitchen.
This banana pudding icebox cake is a perfect example of that. It is basically a combination of two favorites, banana pudding and banana cream pie with graham cracker crust.
Actually, maybe it is a mix of three favorites because it is built a lot like the classic no bake eclair cake. You know it has to be good when it is mashing up the vibes of so many favorite treats.
So, do yourself a favor and put this on your list of things to make this summer. Heck, go ahead and make one in the fall, winter, and spring as well. Desserts this easy and tasty are good any time!

This isn’t the time to use overripe bananas. You want nice yellow bananas. Save overripe bananas for banana bread, banana cake and other baked goods.
Like most icebox cakes, this recipe is best with a nice long chill time. The graham crackers soften and give it more of a cake texture.

I like to make it the day ahead to make sure it has plenty of time to come together. However, 6 hours will do the trick if you want to make it the same day that you plan to serve it.
You can try other fruits. Sliced strawberries or pineapple tidbits would be delicious in an icebox cake like this.
Feel free to top the cake with more fresh whipped cream if you would like. Cool Whip is just a bit more stable and tends to keep its texture longer.
If you want to fancy up the top of your icebox cake, you can drizzle it with chocolate sauce, caramel, or add some chopped nuts. If you want to garnish it with more banana slices, wait until right before you serve it so that they don’t oxidize.

Banana Pudding Icebox Cake
Ingredients
- 2½ cups milk cold
- 1 14 oz can sweetened condensed milk
- 2 3.4 oz boxes vanilla instant pudding mix
- 3 cups heavy cream cold
- 1 14.4 oz box graham crackers
- 7 bananas
- 8 ounces Cool Whip or more whipped cream
Instructions
- In a large bowl, stir together 2½ cups milk and 1 14 oz can sweetened condensed milk.
- Add2 3.4 oz boxes vanilla instant pudding mix and mix until combined. Chill while whipping the cream.
- In a separate bowl, whip 3 cups heavy cream to stiff peaks.
- Fold the whipped cream into the pudding mixture.
- Layer 1 sleeve of graham crackers on the bottom of a deep 9×13-inch pan.
- Slice 7 bananas and layer half of the slices on the graham crackers.
- Spread half of the pudding mixture over the banana slices.
- Repeat with another sleeve of graham crackers, the rest of the banana slices, and the pudding mixture. Top with the last sleeve of graham crackers.
- Spread 8 ounces Cool Whip over the top of the cake. Chill for at least 6 hours or overnight before serving.
