Funfetti Cake Mix Cookies

It only takes 3 or 4 of ingredients to make the soft and delicious funfetti cookies. Start with a cake mix and you’ll have a sweet treat in just a matter of minutes!

  This barely counts as a recipe.  It is so easy.  And so good.  If you like soft cookies that come together in a minute, this recipe is for you!

   They got their name a few years ago.  It was Zach’s birthday.  He was coming over to watch football.  I didn’t have time to bake a cake, let it cool and then frost it.

     So, I made these instead!  Everyone loved them.  Ever since Ro has called them Zach’s birthday cookies.

     Zach, however, calls them crack cookies.  Either way, they are always a hit and great in pinch!

Sprinkle cake mix cookies.

   Sometimes I dust them with powdered sugar.  Other times I put a quick powdered sugar glaze on them.  They are also great plain.  We almost always make them with a cake mix that has sprinkles in it.

    The possibilities are really endless.  They would be great with a chocolate cake mix (especially if you stir in some chocolate chips!). Or you could do lemon, or spice cake, or strawberry, or red velvet…  mmmm so many options!

Again, there are a million places you could go with these.  You could add any variety of extracts, stir in candies or nuts (though not for the boys in my house!). Really the options are only limited by your imagination.

Super Simple Sprinkle Filled Funfetti Cake Mix Cookies

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 15 ounce boxed cake mix with sprinkles inside
  • 2 eggs
  • 1/2 cup oil
  • 3 Tablespoons sprinkles

Instructions

  1. Preheat oven to 350°F
  2. In a bowl, mix together oil and eggs. Stir in cake mix and additional sprinkles if desired.
  3. Plop rounded teaspoonfuls of dough onto cookie sheet.  Top with a few extra sprinkles if desired.
  4. Bake for about 8-10 minutes. You don’t want them to brown, just set.
  5. Eat

Notes

*To do custom colors that match your party theme, buy a plain cake mix and stir in about 1/2 cup of appropriately colored sprinkles.
