Easy Tamale Pie

This fun dinner has the flavor of tamales in a quick and fun casserole form. Tamale pie (or casserole if you prefer) is a perfectly flavorful weeknight dinner that is sure to be a hit!

This tamale casserole is much quicker to make than tamales themselves, but it is loaded with delicious flavor that your family will love.  The delicious corn base whips up quick. The sauce, meat and melted cheese are the perfect way to bring it together.  Top it with all of your favorite toppings and they will be begging for this to be in the regular dinner menu rotation!

I have some news that I haven’t told you yet… I got a new job!  Of course a new job means lots to learn and a different schedule.  I will be spending a lot less time on the interstate, which is a relief.  However everything feels a little extra hectic right now.

Full disclosure… it’s not just the job.
There’s also an upcoming move for my parents which involves a big remodel my husband is spearheading.
We’re hosting a chili cookoff.
There’s a wedding (and shower etc.) for my little sister.
A little dude that lives in my house that is so superdy duper excited about all of the upcoming holidays.

The last thing I want to do is shortchange him on something he is so looking forward to while we are in the most magical years.

So, I feel like we have a ball or two in the air right now.  It’s all part of the fun right?

Fun or crazy, or maybe a little bit of both.  All that to say that sometimes it pays to have a quick dinner or two in your back pocket.

Something that comes together with very little fuss but is a hearty and delicious family pleaser.  This turkey tamale pie fits the bill.

The corn layer has a mild sweetness from the corn muffin mix and just a hint of interest from chiles.  Then a nice layer of meaty goodness and enchilada sauce.  Of course it is all topped of with melted cheese, because well… cheeeeeese!

You can use the toppings to make it your own.  Like it spicy?  Add some jalapenos.

Like it creamy? Add a nice dollop of sour cream.

Like it extra cheesy?  By all means, pile on some more cheese!

Of course you can sprinkle on cilantro or green onions or pico de gallo or whatever your favorites are as well.

Turkey Tamale Pie

This fun dinner has the flavor of tamales in a quick and fun casserole form. It is a perfectly flavorful weeknight dinner that is sure to be a hit!
prep time: 20 MINScook time: 30 MINStotal time: 50 mins


  • 1 lb ground meat (turkey, beef or venison work great)
  • 1/4 tsp garlic powder
  • 1 tsp cumin
  • 1/3 cup milk
  • 1 egg
  • 1 can cream style corn
  • 1 4oz box corn muffin mix
  • 1 can chopped green chiles
  • 2 cups enchilada sauce
  • 1 cup shredded Colby jack cheese
  • salt and pepper
  • Optional toppings: sour cream, green onions, cilantro, jalapenos


  1. Preheat oven to 400 F and spray a 9×13″ pan or a 12″ cast iron skillet.
  2. Brown turkey, seasoned with salt, pepper, garlic and cumin.  Drain if necessary.
  3. Stir together the milk, egg, cream style corn, corn muffin mix and chopped green chiles.
  4. Spread into prepared pan and bake until just barely set, about 15 minutes.
  5. Remove from the oven and spread turkey over the cornbread mixture. Top with enchilada sauce and then shredded cheese. Bake for another 15 minutes.
  6. Serve with sour cream, cilantro, green onions and jalapeno slices.
