Sunshine Fruit Salad

Sunshine fruit salad gives you a little taste of sunshine even on the cloudiest of days. The colors will have you thinking about sunny days and the flavors will remind you of the tropics.

Fruit salads have to be one of the more versatile menu items around. They are at home in almost any situation.

They are a great part of a breakfast or brunch menu. You can serve them as a side dish at dinner.

Need a snack? Fruit salad is great for that. What about dessert? There are plenty of fruit salads that work for that too.

This 4 ingredient recipe couldn’t be simpler to make. If you can slice a banana and open a can, you can make it!

In fact, it is easy enough that you can just memorize the recipe. I wouldn’t blame you if you do, it is such a tasty way to eat your fruit!

This recipe originated as a weight watchers recipe. If you use the sugar free instant pudding, it is pretty low in calories for a sweet treat.

You can use the regular instant pudding if you aren’t counting calories. Or try other flavors like cheesecake or banana pudding.

Most recipes have you use the syrup from the mandarin oranges to make the dressing. I like using the pineapple juice from the can instead.

It is more natural and adds more pineapple flavor. Pineapple is one of my favorite fruits so the more, the better!

Keep it Cold

If you want to bring a salad like this to a potluck or BBQ, place the bowl of fruit salad inside a larger bowl with ice. That will help to keep the salad cold while serving.

Sunshine Fruit Salad

Give your fruit an upgrade with sunshine fruit salad. It is simple to make and features mandarin oranges, pineapple, and bananas in a creamy dressing. It is refreshing and delicious!

Ingredients 

  • 2 20 oz cans pineapple chunks
  • 1 15 oz can mandarin oranges
  • 2 bananas
  • 3 oz. vanilla instant pudding mix

Instructions 

  • Empty one can of pineapple chunks along with the juice into a large mixing bowl. Drain the second can and add only the fruit to the bowl.
    2 20 oz cans pineapple chunks
  • Drain the mandarin oranges and add the orange segments to the bowl.
    1 15 oz can mandarin oranges
  • Slice the bananas and add to the bowl. Toss to coat the bananas in the pineapple juice.
    2 bananas
  • Sprinkle the pudding mix powder over the fruit. Stir to combine.
    3 oz. vanilla instant pudding mix
  • Chill for an hour before serving.
  • When ready to serve, stir to coat everything in the pudding mixture and enjoy!
