Lemon Blueberry Parfaits

Lemon blueberry parfaits are perfect for spring or as a light Easter dessert. Make as one big trifle or as individual parfaits for a fun single serve dessert. The angel food cake, lemon filling, and blueberries are such a wonderful mix of textures and flavors.

Layers of creamy lemon goodness, angel food cake and blueberries makes for a delicious trifle or parfait. This recipe is one of our favorites during the spring, but it is great any time of the year.

Use fresh berries or frozen, make the cake or buy one. No matter how you do it, you should do yourself a favor and make these yummy treats today!

I am going to give credit for this recipe to Sharadan, because she is the one that brought it into my life.  To be completely fair though, I actually got the recipe from her mother-in-law.  

Sharadan had mentioned it was one of her favorites and I was planning a couple’s shower for her and Sam.

We were so excited for the arrival of baby K and I couldn’t wait to spoil them with a circus shower.  So, I contacted Liz and got the recipe from her.

For that party, I made it in individual parfait cups and topped it with animal crackers.  They were so cute and really good!

I must have gotten the recipe from Liz while we were on the phone.  I have scoured my emails and texts and couldn’t find it in either.

So, if this isn’t Liz’s recipe exactly, it is darn close.  I made it as one big trifle for our Easter open house and both Sam and Sharadan recognized it immediately.  It is a perfect spring or summer dessert.

Sam said it is one of the rare desserts that is refreshing, and I have to agree.  It is light and bright and fun!

Lemon Blueberry Parfaits

These gems are perfect for spring. Make as one big trifle or as individual trifles. Lemon. blueberries and angel food are a match made in heaven! Perfect for Easter and spring!
Prep: 15 minutes
Cook: 0 minutes
Total: 15 minutes

Ingredients 

  • 1 angel food cake
  • 21 oz can lemon pie filling
  • 18 oz lemon yogurt 3 yogurt containers
  • 12 oz blueberries
  • 8 oz whipped topping or whipped cream

Instructions 

  • Cut angel food cake into bite sized cubes.
    1 angel food cake
  • Stir together pie filling and yogurt.
    21 oz can lemon pie filling, 18 oz lemon yogurt
  • Either in individual glasses or one large trifle bowl, layer angel food cake, lemon mixture, blueberries and whipped topping until all ingredients are gone.
    12 oz blueberries, 8 oz whipped topping or whipped cream
  • Refrigerate until ready to serve.

  2. I am so jealous about the blueberry picking! I don't know of anywhere local to do that. My dad had tried to plant a bush a time or two but has never had any luck.

  3. Carlee, that looks like the perfect Spring dessert! I've always wanted to make a trifle. I actually bought a trifle bowl and it is still sitting there waiting to be used. This will be a great addition to my Easter brunch!

    1. You really should make a trifle soon. The best thing about a trifle is you can turn you failed baking project (not that something like that would ever happen) into something delicious and beautiful anyway! If a cake sticks to the pan or cracks while being dumped, it still makes a beautiful trifle.
