We really enjoyed this, especially the second night after it had a chance to thicken. I used a can of coconut milk instead of half and half because it’s what I had in the pantry. I think cutting the vegetables smaller, especially the potatoes, and sauteeing them first is a smart idea. We’re adding this to our family recipe book.
