Roasted Kohlrabi With Parmesan Cheese

Roasted kohlrabi is such a great way to highlight the fresh vegetable. Add a little bit of garlic and Parmesan cheese to make an easy and tasty side dish.

Are you looking for a new way to enjoy kohlrabi? Try roasting it to soften it and bring out a slight natural sweetness.

Kohlrabi can be a bit intimidating if you aren’t sure what to do with it. It just looks like a strange bulb that may seem a bit foreign when you see it in your CSA box or farmer’s market.

More and more it is available in the grocery stores as well. So you should pick some up and give them a try.

Kohlrabi is actually related to cauliflower, broccoli and cabbage. The greens are edible, but usually you will find the bulb being sold on its own.

It can be enjoyed raw in salads or slaws. Or cut it into sticks and enjoy them with your favorite dip.

It is also great cooked. Try tossing it in soups or cook it in a creamy sauce for a tasty side dish.

Preparing Kohlrabi

No matter the recipe, you are going to want to start by peeling the kohlrabi. The outer skin is very fibrous and not enjoyable to eat.

You will also want to remove the core where the stem was attached. After that, the flesh of the bulb can be sliced, cubed or shaved.

In this particular recipe, I like to do about a 3/4 inch cube. It’s easy to cut and easy to consume.

Toss the chunks in your favorite cooking oil. I find avocado oil or vegetable oil work well for roasting.

The flavor is pretty neutral and the smoke point is high enough to withstand the hot oven temperatures. Then liberally add your favorite spices.

I stuck with garlic, salt and pepper to keep it simple. You can add paprika, thyme or whatever you like.

Roast the cubes of kohlrabi until they are fork tender and slightly caramelized. Then add some Parmesan cheese and put it back in the oven just long enough to melt it and enhance its nutty flavor.

Then it is ready to eat. It is a great side dish for almost any meal. It’s especially perfect with pork chops, chicken or pork tenderloin.

Ingredients 

  • 3 medium kohlrabi bulbs
  • 1 Tablespoon vegetable oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • 2 Tablespoons grated Parmesan cheese

Instructions 

  • Preheat oven to 450°F.
  • Peel 3 medium kohlrabi bulbs and cut inside into bite sized cubes, about 3/4" in size.
  • Toss kohlrabi cubes in 1 Tablespoon vegetable oil, ¼ teaspoon garlic powder, ¼ teaspoon salt, and ⅛ teaspoon ground black pepper.
  • Spread over rimmed baking sheet.
  • Roast for 20 minutes.
  • Stir kohlrabi and sprinkle with 2 Tablespoons grated Parmesan cheese. Return to the oven for minutes to melt the cheese.
  • Enjoy!
