These super easy chocolate cake mix cookies have peanut butter chips stirred in giving you that perfect flavor combination. They are soft, tasty and quick too.

If you want the goodness of fresh baked cookies, but don’t want to put in a lot of time or effort, this recipe is for you. You can serve homemade cookies without any chill time and hardly any measuring.

It is the perfect answer when you need a treat to share but you don’t have much time to make it. Or bake some to quickly quiet your sweet tooth when it is misbehaving.

Making Cake Mix Cookies

This dough comes together in just a minute or two. Stir together the cake mix, eggs and oil to make the base dough.

Then stir in a bag of peanut butter chips. That’s really it!

You don’t have to chill the dough or soften butter or do any of the time consuming steps in other cookie recipes. Scoop the dough onto a baking sheet and it will be in the oven within five minutes of the time you started.

These cookies are super soft and kind of flat. We love them that way, but if you are looking for a slightly thicker chewy cookie just add an extra quarter cup of flour.

How should I store cake mix cookies?

Cookies are best stored in an airtight container at room temperature. They will hold that way for at least a week.

Try adding a piece of sandwich bread to the container to keep them soft longer. For even longer storage, put them in a freezer bag and freeze them for up to 3 months.

Other Flavor Combinations

We love the chocolate cookie with yummy peanut butter chips. Our whole family goes nuts over chocolaty peanut butter desserts.

But you can mix and match any cake mix and baking chip combination. Just follow the directions otherwise.

Some fun examples would be using red velvet cake mix and white chocolate chips. They would be cute for Christmas or Valentine’s Day.

Or sub in chocolate chips for the peanut butter chips in this recipe for double chocolate chip cookies. Or even better yet, use half chocolate and half peanut butter chips.

You can also use coated candies instead of chips for more pops of color. M&M’s or Reese’s Pieces would be great alternatives to baking chops.

Lemon cake mix with white chips would be another tasty combination. Or a spice cake mix with either butterscotch or cinnamon chips would be phenomenal.

The options are pretty much limitless. Luckily the recipe is so easy there is no reason not to try them all!

Ingredients
 

  • 15 oz. chocolate cake mix
  • ½ cup cooking oil
  • 2 large eggs
  • 10 oz. peanut butter chips

Instructions
 

  • Preheat oven to 350°F.
  • Stir together cake mix, oil and eggs.
    15 oz. chocolate cake mix, ½ cup cooking oil, 2 large eggs
  • Fold in peanut butter chips.
    10 oz. peanut butter chips
  • Scoop 1 Tablespoon balls of dough (or a small cookie scoop full) onto a cookie sheet.
  • Bake for 7-9 minutes. Cool on the pan for 5 minutes, then move to a wire rack to cool completely.
  • Store in an airtight container at room temperature for up to a week or freeze for up to 3 months.

Notes

If you like soft cookies, put a piece of sandwich bread in the container with the cookies when you store them. It will help keep them softer longer.
