Homemade Star Crunch

These homemade star crunch will give you all the nostalgic vibes with chocolate, caramel, and crunchy rice in every bite. It will remind you of the classic lunchbox treat but homemade. They are fun to make and taste great!

If your house was anything like mine growing up, there was a bin of treats that were designated for lunchboxes. The little plastic wrapped treats were just for when we packed a cold lunch.

They weren’t to be touched any other time. Most of the time it was granola bars.

Sometimes, when we were lucky, it would have things like star crunch, oatmeal cream pies, or nutty buddy bars. Those were the good days!

Usually when I need a taste of nostalgia, I make a batch of oatmeal cream pie bars. I thought it would be fun to add to the homemade treat collection though.

So, now we can make homemade star crunch too! They are a simple no bake treat that you are going to love!

For The Love of Star Crunch

If you’ve never heard of star crunch, you have been missing out. They are a Little Debbie treat that has crisp rice, chocolate, and caramel. This recipe gives you that same flavor combo with cleaner flavors and a better texture.

Carlee’s Tips and Tricks

The mixture is a bit sticky, so spraying things with a light coat of cooking spray will help make everything more manageable. A quick spritz on the wax paper and cookie scoop is recommended.

I like using a large cookie scoop to portion the cookies. However, like with any no-bake cookie, you can make them an size you want to.

You don’t have to flatten the cookies, but it does give them the shape of the Little Debbie treat. Lightly spray the bottom of a measuring cup and just apply a little bit of pressure.

Don’t skip chilling them. It helps to set the gooey mixture and give the cookies the right chewy texture.

Homemade Star Crunch

If you have a hankering for Little Debbie star crunch cookies, this is the recipe for you. These no bake cookies are made with crispy rice cereal, cocoa powder, condensed milk, and gooey caramel. 
Prep: 10 minutes
Cook: 10 minutes
Chill Time 1 hour
Total: 1 hour 20 minutes

Ingredients 

  • ½ cup butter
  • ½ cup cocoa powder
  • 1 14 oz can sweetened condensed milk
  • 22 soft caramel candies like Kraft or Werther's
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 10 oz package marshmallows
  • 6 cups Rice Krispies cereal

Instructions 

  • Line a couple of baking sheets with wax paper or parchment paper. Lightly grease with cooking spray for easier release later.
  • In a large skillet or saucepan, melt ½ cup butter over medium-low heat.
  • Stir in ½ cup cocoa powder. Then add 1 14 oz can sweetened condensed milk and mix until combined.
  • Add 22 soft caramel candies and continue to cook and stir until they are completely melted.
  • Reduce the heat to low and stir in 1 teaspoon vanilla extract, ¼ teaspoon salt, and 1 10 oz package marshmallows. Keep stirring until the marshmallows are melted and the mixture is uniform.
  • Remove from the heat and stir in 6 cups Rice Krispies cereal.
  • Lightly grease a large cookie scoop and the bottom of a measuring cup. Scoop the mixture onto the wax paper, leaving a little bit of room between them. After you have several scooped, press them down slightly with the bottom of the measuring cup to give them the right shape.
  • Refrigerate for an hour or until set.

Notes

Place your cookies in an airtight container for storage. They can be kept at room temperature for up to 4 days. However, I prefer to keep them in the refrigerator. They can be stored there for up to three weeks. You can freeze them for up to 3 months. They are good eaten cold (or even frozen) or at room temperature.
