If you have a hankering for Little Debbie star crunch cookies, this is the recipe for you. These no bake cookies are made with crispy rice cereal, cocoa powder, condensed milk, and gooey caramel.
Line a couple of baking sheets with wax paper or parchment paper. Lightly grease with cooking spray for easier release later.
In a large skillet or saucepan, melt ½ cup butter over medium-low heat.
Stir in ½ cup cocoa powder. Then add 1 14 oz can sweetened condensed milk and mix until combined.
Add 22 soft caramel candies and continue to cook and stir until they are completely melted.
Reduce the heat to low and stir in 1 teaspoon vanilla extract, ¼ teaspoon salt, and 1 10 oz package marshmallows. Keep stirring until the marshmallows are melted and the mixture is uniform.
Remove from the heat and stir in 6 cups Rice Krispies cereal.
Lightly grease a large cookie scoop and the bottom of a measuring cup. Scoop the mixture onto the wax paper, leaving a little bit of room between them. After you have several scooped, press them down slightly with the bottom of the measuring cup to give them the right shape.
Refrigerate for an hour or until set.
Notes
Place your cookies in an airtight container for storage. They can be kept at room temperature for up to 4 days. However, I prefer to keep them in the refrigerator. They can be stored there for up to three weeks. You can freeze them for up to 3 months. They are good eaten cold (or even frozen) or at room temperature.
