If you are looking for a fun make ahead dessert, these frozen icebox sandwiches are just the thing. They are easy to put together and are a fun way to cool down on a hot day.

Icebox sandwiches are kind of like a mix between an eclair cake and an ice cream sandwich. The creamy pudding filling is sandwiched between two graham crackers and frozen.
It makes 24 individual treats. So, you can serve them to a crowd or keep them in the freezer for when a snack attack strikes.


If you eat one straight out of the freezer, it gives you an ice cream sandwich experience. Or, let one sit out on the counter for 10-15 minutes before eating it for more of an icebox cake experience.

Play with different flavors
You can easily customize these by using different flavors of pudding mix. You could also use chocolate graham crackers for even more chocolate in every bite.

Frozen Icebox Sandwiches
Ingredients
- 4 ounces cream cheese softened
- 1 3.4 oz box vanilla instant pudding mix
- 1½ cups milk
- 8 ounces Cool Whip defrosted
- 1 cup mini chocolate chips
- 24 whole graham crackers 1 box
Instructions
- In a large bowl, beat together 4 ounces cream cheese and 1 3.4 oz box vanilla instant pudding mix until smooth.
- Slowly add 1½ cups milk, mixing as you go until it is incorporated.
- Fold in 8 ounces Cool Whip and 1 cup mini chocolate chips. Put in the refrigerator while you prepare the graham crackers.
- Carefully break 24 whole graham crackers into squares. Place half of the graham crackers on cookie sheets.
- Scoop about 3 Tablespoons of the pudding mix onto each graham cracker square. (A large cookie scoop works well for this.) Then top with another graham cracker half.
- Freeze the trays of sandwiches for at least an hour. Then either individually wrap or transfer to a freezer bag for storage. Return to the freezer.
- Either eat straight out of the freezer for an ice cream sandwich experience. Or, allow it to sit at room temperature for 10 minutes before enjoying for a softer filling.
