Keep these icebox sandwiches in the freezer for a cool and creamy treat whenever you need one. They are quick to make and taste wonderful. They are a fun mix of icebox cake and ice cream sandwich.
In a large bowl, beat together 4 ounces cream cheese and 1 3.4 oz box vanilla instant pudding mix until smooth.
Slowly add 1½ cups milk, mixing as you go until it is incorporated.
Fold in 8 ounces Cool Whip and 1 cup mini chocolate chips. Put in the refrigerator while you prepare the graham crackers.
Carefully break 24 whole graham crackers into squares. Place half of the graham crackers on cookie sheets.
Scoop about 3 Tablespoons of the pudding mix onto each graham cracker square. (A large cookie scoop works well for this.) Then top with another graham cracker half.
Freeze the trays of sandwiches for at least an hour. Then either individually wrap or transfer to a freezer bag for storage. Return to the freezer.
Either eat straight out of the freezer for an ice cream sandwich experience. Or, allow it to sit at room temperature for 10 minutes before enjoying for a softer filling.
