You can even serve it on a bed of lettuce and enjoy it as a salad. Or try may favorite and turn it into nachos with some tortilla chips. Queso chicken is really versatile, super easy, and oh so tasty.

It’s a straightforward recipe that doesn’t require a lot of prep. All you have to do is dump the ingredients into the crockpot, set the timer, and let the slow cooker do all the work while you go about your day.

Tips and Tricks

Use boneless, skinless chicken breasts. They shred easily and don’t have excess fat.

Drain most of the extra liquid after the chicken is cooked. If you don’t drain it, your tacos will be too wet.

The chicken will have absorbed so much flavor while it cooked. Shred it with a couple of forks to get it to the texture you like.

If the chicken is cooked through, it should shred really easily. If it doesn’t shred, cook it a little bit longer and try again.

Once the chicken is shredded and the excess liquid is drained, stir on some more queso. That will give you that rice and creamy finish.

Topping Ideas

Whether you are eating the queso chicken in a taco or as a burrito bowl, you need great toppings to take it to the next level. Experiment with your favorites or try some of these ideas:

  • Diced tomatoes
  • Avocado
  • Cilantro
  • Sour cream
  • Jalapenos
  • Salsa
  • Shredded lettuce
