Crockpot Queso Chicken

Tips and Tricks

Use boneless, skinless chicken breasts. They shred easily and don’t have excess fat.

Drain most of the extra liquid after the chicken is cooked. If you don’t drain it, your tacos will be too wet.

The chicken will have absorbed so much flavor while it cooked. Shred it with a couple of forks to get it to the texture you like.

If the chicken is cooked through, it should shred really easily. If it doesn’t shred, cook it a little bit longer and try again.

Once the chicken is shredded and the excess liquid is drained, stir on some more queso. That will give you that rice and creamy finish.

Slow Cooker Queso Chicken

If you are looking for an easy and delicious way to change up your taco game, these crockpot queso chicken tacos or rice bowls are the way to go. Made with shredded chicken, diced tomatoes and green chilies, queso and taco seasoning, this recipe is loaded with flavor.

Total: 5 hours 5 minutes

Ingredients 

  • 3 pounds boneless skinless chicken breasts
  • 1 envelope taco seasoning
  • 10 ounce can Rotel or similar
  • 15 ounce jar queso cheese dip

Instructions 

  • Place chicken in the slow cooker. 
    3 pounds boneless skinless chicken breasts
  • In a medium mixing bowl combine the taco seasoning, rotel, and half of the jar of queso. 
    1 envelope taco seasoning, 10 ounce can Rotel
  • Cook on low for 6 hours or high for 4 hours. 
  • Discard most of the liquid from the slow cooker. Shred the chicken.
  • Stir the other half of the jar of queso into the chicken.
  • Serve with more queso for topping. 

Notes

Store leftovers in an airtight container for up to 3 days. 
Add jalapenos or more green chilies for a spicier dish. 
Add sliced onions and peppers while cooking if desired.
