If you are looking for an easy and delicious way to change up your taco game, these crockpot queso chicken tacos or rice bowls are the way to go. Made with shredded chicken, diced tomatoes and green chilies, queso and taco seasoning, this recipe is loaded with flavor.
In a medium mixing bowl combine the taco seasoning, rotel, and half of the jar of queso.
Cook on low for 6 hours or high for 4 hours.
Discard most of the liquid from the slow cooker. Shred the chicken.
Stir the other half of the jar of queso into the chicken.
Serve with more queso for topping.
Notes
Store leftovers in an airtight container for up to 3 days. Add jalapenos or more green chilies for a spicier dish. Add sliced onions and peppers while cooking if desired.
