These are the perfect savory snack. Whether you are hosting a party or watching the big game, easy make ahead finger food is always a great option. These tortilla pinwheels are stuffed with the perfect blend of zippy and creamy filling. Make these zesty beef rollups for your next gathering and you are sure to get requests for them again.
This recipe actually originates from the very early days of my blog. It was not was of the original recipes my family submitted when I sent out the call for recipes to try.
Instead, it was part of a virtual big game party we had. My cousin Cori made these rollups and sent the recipe and the pictures.
She also made tortellini casserole and stuffed mushrooms that we loooooove. So I had to make both and share the recipes here.
I love having tried and true recipes from my family. We always eat well, so I can trust them to be fabulous.

Besides that is the origin of this whole thing anyway. I wanted a way to preserve some of those old family recipes along with favorites from my childhood.
It was mostly just for myself, a searchable library of recipes. I figured it would also be a great way to share those recipes with my siblings and cousins if they wanted to make them as well.
Of course things have blossomed and bloomed and three years later here we are. Now I am trying to go back and update those early posts when I had no idea what I was doing.
Not that I do necessarily now, but at least a few more of you can see them if I spiffy them up.
I made these for a small get together I had recently. They were a hit with those who had them, but surprisingly enough they were a huge hit with my pickle hating husband.
I said I could take the extras to work and he said he could take them to the garage instead.
So he took them to the garage and a few buddies came over. He said they were all but gone by the time the evening was over and he was looking forward to the rest the next day.
Of course that put a smile on my face. I didn’t point out the pickles!

Sometimes we just need a little reminder of how much we like things. Especially when they are super simple to make recipes that are perfect for making ahead! These are definitely going to show up at our house again soon!
Zesty Beef Rollups

Zesty beef roll-ups are the perfect two bite appetizers. They are creamy, cheesy, zesty, salty and oh so snackable!
Ingredients
- 16 ounces cream cheese, softened
- 4 ounces chipped beef
- 2 cups shredded cheddar cheese
- 1 package dry ranch dressing mix
- 2 dill pickles or a handful of pickle slices
- 4 burrito sized soft tortillas (or several smaller ones)
Instructions
- Chop the pickles and chipped beef
- Mix together seasoning and cream cheese
- Stir beef, cheese and pickles into cream cheese
- Spread on tortillas and roll tightly
- Chill for at least an hour, then cut into 1/4-1/2 inch slices
