When a sandwich is done right, there is nothing like it. This yummy chopped cheese sandwich recipe is the latest in our collection of hot sandwiches that are perfect for a weeknight.

Here in the Midwest, we have our beloved Maid Rite sandwich. It is a loose meat sandwich where the ground beef is the star.

The chopped cheese isn’t too different, except it adds American cheese. And not a slice on top, like a cheese rite, but mixed in.

It’s a bit like a sloppy joe, but instead of tomato sauce, the meat is coated in cheese. Can you even?!

Toppings To Take You Sandwich To The Next Level

Of course, you can just pile your ground beef and cheese mixture on a bun. It would be delicious and there is nothing wrong with that.

However, you can add any of these toppings to take it to the next level:

  • mayonnaise
  • tomato slices
  • lettuce
  • Takis
  • Hot Cheetos
  • thin sliced onions
  • pickled jalapenos or banana peppers

Next Level

If you want, you can even make it like a cross between a cheesesteak and a Maid Rite and add grilled peppers into the mix. It’s your sandwich. Make it your own!

Of course you can also experiment with different kinds of buns. Kaiser rolls would be great.

You can also spice up your meat mixture with Sazón or any seasonings you like.

Cheese is another place you can play. Try using provolone or cheddar if American isn’t your thing.

Storage

If you can’t eat a whole batch in one evening, don’t despair. Leftover sandwiches can be wrapped in parchment paper or plastic wrap and refrigerated in an airtight container for up to 2 days.

If you are looking for a quick, tasty dinner option that gives you a taste of a New York City bodega, the chopped cheese sandwich is just the thing. This recipe is super simple to put together and the whole family is going to love these cheesy sandwiches.
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes

Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion finely diced
  • 1 pound lean ground beef
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon soy sauce
  • 4 slices American cheese
  • 4 hoagies or your favorite buns
  • 4 tablespoon mayonnaise
  • 2 cups lettuce shredded
  • 1 large tomato thinly sliced

Instructions

  • Heat the 1 tablespoon vegetable oil in a large skillet over medium-high heat.
  • Add the 1 small onion and cook, stirring frequently, until tender, about 5 minutes. Remove the cooked onions from the pan and set aside.
  • Put the 1 pound lean ground beef into the same hot pan, spreading it out and pressing it down into the pan to get the maximum amount of surface area touching the pan.
  • Sprinkle the ½ teaspoon garlic powder, ½ teaspoon salt, and 1 teaspoon ground black pepper over the meat. Don’t stir the meat, just let it cook until the bottom turn a deep golden brown, about 5 minutes.
  • Flip the beef, pressing the uncooked side into the pan, and cook until it is a deep golden brown, about another 5 minutes.
  • Chop the beef to break it apart, add the cooked onions back into the pan. Stir the onions and 1 tablespoon soy sauce into the meat mixture.
  • Spread the meat back out and place the 4 slices American cheese on top. Let it melt before turning off the heat.
  • Divide the chopped cheese beef between the buns. Top with mayo, lettuce, and tomato, or toppings of your choice.

This sandwich is so delicious. I did twerk mine just a little bit and used an envelope of French onion soup mix in my meat after it was cooked and lot’s of good grated cheese. They were such a huge hit at my table. I served it with a nice Cesar Salad and fresh cut up fruit. We will enjoy this one again and again.

Delish! My husband said this is the best meal he’s had in a long time. I used King’s Hawaiian mini sub rolls, and made French fries to top it off. Definitely on the rotation list! Thanks for all your great recipes.
