Easy Cinnamon Ice Cream with Brown Sugar

This creamy, delicious homemade cinnamon ice cream made with brown sugar and half and half is as easy as it can be to make. This egg free recipe only takes 5 simple ingredients and will be churning in no time. The ice cream texture is fabulous, too. You can scoop it straight from the freezer.

There is just something special about homemade ice cream that makes it taste so much better than what you can get at the store. This recipe features a nice cinnamon flavor that is great on its own or with your favorite apple desserts.

About This Recipe

We love making homemade ice cream. There is something so special about it, but it can be very simple to make.

We have tried all kinds of base recipes over the years, but recently, we have been loving making ice cream with half and half. It really doesn’t get any easier, and the texture is wonderful.

Rather than reinventing the wheel, we started with that recipe and made some tweaks to create this fabulous cinnamon ice cream.

The brown sugar adds a little something extra. The molasses compliments the cinnamon nicely.

It is nice to have a little extra depth of flavor and warmth. Though you can use granulated sugar if you don’t have brown sugar.

Making The Ice Cream

All you have to do is stir together the cinnamon, salt, and brown sugar. Then, dissolve the sugar completely into the half and half and vanilla extract.

That’s it! The ice cream base is ready to go into the machine in just a few minutes.

This recipe can also be used as a base for other flavors and add-ins. If adding chunks, wait until the ice cream is basically frozen before you add them.

You could make cinnamon clusters like we did in cinnamon honey crunch ice cream. Or add little chunks of frozen apple pie to make an apple pie ice cream.

Or leave it just the way it is. It is perfect like that. Then enjoy it on its own or over a serving of warm apple crisp or crockpot cinnamon apples.

Easy Cinnamon Ice Cream

This creamy cinnamon ice cream has brown sugar goodness too. It is super simple to make with a quart of half and half. There are no eggs or cooking required. It goes from ingredients to churning in just a couple of minutes. It is perfect on its own or with your favorite apple or pumpkin desserts.
Prep: 5 minutes
Churn and Chill Time 3 hours 30 minutes
Total: 3 hours 35 minutes

Ingredients 

  • ¾ cup light brown sugar packed
  • 2 teaspoons ground cinnamon
  • 4 cups half and half
  • 2 teaspoons vanilla extract
  • 1 pinch salt

Instructions 

  • In a large mixing bowl, whisk together 2 teaspoons ground cinnamon, ¾ cup light brown sugar, and 1 pinch salt until combined.
  • Stir in the 4 cups half and half and 2 teaspoons vanilla extract. Whisk until the sugar is fully dissolved.
  • Pour into ice cream maker and churn according to the directions of your machine.
  • Scoop into ice cream storage containers and freeze until solid.

Notes

Do not use fat free half and half, you need the fat to have creamy ice cream. It will freeze more solid and with more ice crystals if you use fat free.
