Chocolate Chip Cornflake Cookies

If you like cookies with a little bit of crunch, these chocolate chip cornflake cookies are for you. The recipe makes a nice sized batch and the cookies have a perfect mix of flavor and texture.

These cookies are on the crunchy side to start with, then they have the added crunch of bits of cornflakes cereal throughout. That not only adds texture, but a bit of almost caramelized malt type flavor to the mix.

That and the oats go so well with the cookie base and chocolate chips. These cookies are fabulous as written, and can be easily adapted to satisfy your cravings.

This recipe is from my coworker, June. She noticed that my 7 cup cookie recipe was a lot like one of her favorite cookies that involved chocolate chips and cornflakes.

June was nice enough to send over the recipe, so of course I had to give them a go. They were an instant hit, and I can’t wait to make another batch for my grandma.

She loves her cookies with a bit of crunch. So these are going to go perfectly with her coffee.

The Dough

Just like in the 7 cup cookies, this dough uses a mix of butter and vegetable oil. I think that combination is what gives them their crunch, but they still keep a tender quality too.

There is a mix of cornflakes and oatmeal in these cookies. You could easily substitute part of one of those items for something like coconut.

You could also mix in some chopped pecans or walnuts if you like them in your cookies. The dough would easily take anywhere from a half cup to a full cup of nuts.

The dough is on the soft side, even after it has been chilled. Don’t let that through you off, just bake them and see how good they are.

Chocolate Chip Cornflake Cookies

Ingredients 

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 Tablespoon baking soda
  • 1 cup old fashioned oats
  • 2 cups chocolate chips
  • 2 cups cornflakes

Instructions 

  • In large mixer bowl, beat together butter, sugar, and brown sugar until light and fluffy.
    1 cup butter, 1 cup granulated sugar, 1 cup light brown sugar
  • Add the eggs, one at a time, mixing until combined.

  • Stir in the oil and vanilla. It is okay if it looks a little bit lumpy or broken at this stage.
    1 cup vegetable oil, 1 teaspoon vanilla extract
  • Add flour and baking soda, mixing until combined.
    3½ cups all-purpose flour, 1 Tablespoon baking soda
  • Add the chocolate chips, oats, and cornflakes. Mix until uniform.
    1 cup old fashioned oats, 2 cups chocolate chips, 2 cups cornflakes
  • Cover and chill for at least 30 minutes or up to 2 days.
  • Preheat oven to 350℉.
  • Use a medium cookie scoop to portion out about 1½ Tablespoons of dough. Leave 2 inches between mounds of dough on cookie sheet. Bake for 11-14 minutes, or until golden.
  • Cool on cookie sheet for about 3 minutes, then transfer to a wire rack to cool completely.

Notes

Use any neutral flavored oil.
Feel free to play with the mix-ins. Add a little shredded coconut or some chopped nuts if desired.

    I’ve made these three times since Christmas. I love them!! They are so easy to make and always come out perfect. I think having oil in the cookie mix gives them extra crunch and texture. It’s now my favorite cookie recipe.
