If you like cookies with a little bit of crunch, these chocolate chip cornflake cookies are for you. The recipe makes a nice sized batch and the cookies have a perfect mix of flavor and texture.
In large mixer bowl, beat together butter, sugar, and brown sugar until light and fluffy.
Add the eggs, one at a time, mixing until combined.
Stir in the oil and vanilla. It is okay if it looks a little bit lumpy or broken at this stage.
Add flour and baking soda, mixing until combined.
Add the chocolate chips, oats, and cornflakes. Mix until uniform.
Cover and chill for at least 30 minutes or up to 2 days.
Preheat oven to 350℉.
Use a medium cookie scoop to portion out about 1½ Tablespoons of dough. Leave 2 inches between mounds of dough on cookie sheet. Bake for 11-14 minutes, or until golden.
Cool on cookie sheet for about 3 minutes, then transfer to a wire rack to cool completely.
Notes
Use any neutral flavored oil.Feel free to play with the mix-ins. Add a little shredded coconut or some chopped nuts if desired.
