Chewy Trail Mix Bars

Chewy trail mix bars are loaded with dried fruit, nuts and whole grains, just like you would expect them to be. They have a great chewy texture that is a cross between a granola bar and a cookie bar. Enjoy them as a quick grab and go breakfast, as a hearty snack, or even as a healthier dessert.

This is one of those chameleon recipes that is good just about any time of the day. They are loaded with oats and whole grains.

They also have a fun mix of dried fruits. The dates add the caramelly goodness that we have all come to love in date recipes.

Then there are the prunes, and craisins rounding out the mix. You could mix and match your own dried fruits if you want.

Think raisins, dried cherries, dried blueberries or apricots. Just keep the total amount about the same, and the bars should be good.

Use whatever you have on hand or like the best. Any fruit you would toss in a trail mix should work well here.

The same goes with the nuts. I used pecans because I love them and had them. Almonds, cashews, or a mix of nuts would also be delicious.

I am sure you are picking up on the trail mix vibes now. They have all of the makings of a tasty mix that could keep you going on a long hike.

A little bit of sweetened condensed milk and butter or coconut oil do the work of holding them together. All you have to do is stir everything together into a thick batter and press it into a pan.

The oven does the rest. You well end up with bars that have a great chew and are part granola bar, part cookie bar, and part baked oatmeal.

If you are trying to add some more fiber to your diet, these are for you. Or if you are looking for a healthier grab and go breakfast, snack or treat. There really is no bad time for a trail mix bar!

Chewy Trail Mix Bars

These trail mix bars have a great chewy texture that is a cross between a granola bar and a cookie bar. They are loaded with dried fruits, nuts, oats and more. They will help fill you up while tasting great. You are going to love these bars!

Ingredients 

  • 2 cups old fashioned oats
  • 2 cups whole wheat flour
  • ½ cup ground flax
  • 2 teaspoons baking soda
  • 1 cup shredded coconut
  • ½ cup pecan pieces
  • ⅔ cup dates finely chopped
  • ⅔ cup prunes finely chopped
  • ⅔ cup dried cranberries or raisins
  • 1 cup butter melted
  • ¾ cup sweetened condensed milk
Makes: 9 x 13inch rectangle, 1inch height

Instructions 

  • Preheat oven to 350℉ and line a 9×13-inch pan with parchment paper.
  • In a large bowl, stir together 2 cups old fashioned oats, 2 cups whole wheat flour, ½ cup ground flax, 2 teaspoons baking soda, 1 cup shredded coconut, ½ cup pecan pieces, ⅔ cup dates, ⅔ cup prunes, and ⅔ cup dried cranberries.
  • In a small bowl, stir together 1 cup butter and ¾ cup sweetened condensed milk.
  • Pour the condensed milk mixture into the dry ingredients and stir until you have a stiff dough. It will take a little bit of effort, but it should come together without any dry areas. If there are still dry ingredients after prolonged mixing, add another Tablespoon or two of condensed milk until it is all coated.

  • Press the dough into the lined pan.
  • Bake 15-20 minutes or until the edges are lightly browned.

  • Cool and then cut into bars.

Notes

  • If you want to make a half batch, use the 0.5x button on the recipe card and bake in an 8-inch square pan. 
  • Feel free to mix and match different dried fruits and nuts. 
  • Toss in a handful of chocolate chips if you want them to feel like more of a treat. 
  • Store the bars in an airtight container at room temperature for up to a week or freeze for up to three months.
