Modeling chocolate is a tasty way to add flare to your baked goods. This recipe uses just white chocolate (or white candy melts) and corn syrup and it has the perfect pliable texture to be turned into all sorts of decorations.

Little Dude has gotten the cake decorating bug and it turns out, he is really good at it. It’s funny because I love making cakes, but I am not very artistic.

So, I tend to keep the decorations simple. He, on the other hand, picks more complicated designs that make me a little bit nervous.

He has a way of pulling them off, though and it is fun to watch him work! His first solo cake was a cheeseburger cake he made for my grandma’s birthday.

He used dyed some modeling chocolate orange for the slice of cheese. That was our first foray into modeling chocolate and it was a blast.

The next year, for his own birthday he wanted a duck hunting themed cake. He used modeling chocolate again to make the decorations.

This year, he had a garden themed birthday. Again, he turned to modeling chocolate to make all of the fruits and veggies on top.

We think it tastes so much better than fondant and it is fun to play with as well.

So, I thought it was time to share the recipe here. That way you could make it… but really so that we have an easy place to find it ourselves too!

His favorite cake is the 10-inch chocolate cake. So, that is what all of his cakes are.

However, of course you can use this recipe to make fun figurines and shapes for any kind of dessert you are whipping up.

White Modeling Chocolate

Author: Carlee
Servings: 10 Ounces
If you are looking to make edible decorations for your desserts, this white modeling chocolate recipe is just the thing. It is only two ingredients, takes color well, and can be formed into all kinds of shapes.
Prep: 10 minutes
Cook: 2 minutes
Chill Time 30 minutes

Ingredients

  • 8 ounces white candy melts
  • 2 ounces light corn syrup

Instructions

  • Put candy melts in a medium microwave safe bowl.
  • Warm in the microwave using 20-30 second bursts on high. Stir after each trip to the microwave until the chocolate stirs smooth.
  • Add the corn syrup and stir to combine. The candy melts will seize a bit. Keep stirring until the mixture is just combined. Don't stir too much or it will start to separate and get oily.
  • Let set until firm, or chill for 20-30 minutes.
  • Knead the white chocolate until smooth and pliable.
  • Use a drop or two of food coloring gel to dye any bits of modeling chocolate that you would like colored. Just knead it in. Then shape the chocolate like you would playdough in order to get the decorations you desire.

Notes

If you want to use real chocolate to make modeling chocolate, increase the corn syrup to 3 ounces.
Store extra modeling chocolate in the freezer. To use, warm it in the microwave for 10-15 seconds, then knead until pliable and smooth.
