Breakfast casseroles don’t have to be huge and bready.  This quick to make casserole uses tater tots as a base. From there add eggs, cheese and ham for a delicious savory bake. 

It is perfect for a weekend breakfast or a fabulous breakfast for dinner option. Add your favorite toppings to take it to the next level of tasty.

We love breakfast in our family.   Make that, we love breakfast food in our family.

I start my day with black coffee most mornings.  I am just not in the mood for a big breakfast.

My husband doesn’t wake up hungry, he needs time to build an appetite.  Little Dude wakes up so hungry that he can’t wait for breakfast to be made.

He needs a banana or toast as soon as possible.  So, we if we want to enjoy our breakfast food together we eat it for dinner!

Luckily this tasty breakfast casserole also makes a wonderful dinner. We have enjoyed it as that several times.

Though we have also doubled the recipe and made it for brunch with family as well. It is so easy to put together, you will find yourself making it for all kinds of occasions.

So if you are looking for a fun new way to enjoy your eggs, you are in the right place. This casserole is really delicious and can be customized in so many tasty ways.

You can serve it with a green salad if you are having it for lunch or dinner. Or serve it with a nice fruit salad as a tasty breakfast or brunch option.

Easy Substitutions and Additions

We love making this egg casserole with ham because it is easy. All you have to do is chop it up and toss it in.

However cooked and crumbled bacon or some browned breakfast sausage are also good. Use whichever meat you happen to have on hand or your favorite.

The cheese is another place where you can play. We like shredded cheddar, but Swiss, Colby jack, pepper jack or gouda would be delicious.

You can add veggies if you would like. I would cook them down a bit before adding them, but that is up to your personal preference.

Go ahead and assemble the casserole the night before if you want. Just wrap it and refrigerate it until you are ready to bake it off.

Pull the casserole out of the refrigerator when you start preheating the oven to take a little bit of the chill off, then bake as directed. It’s an easy way to have a tasty breakfast in the morning.

Enjoy a piece of this tater tot egg casserole on its own, or add toppings to make it even more flavorful. A little country gravy is great on it.

Or add sliced jalapenos or a little bit of salsa for some spice. Do it up however you like it!

Yes! Casseroles make great freezer meals and this tater tot egg casserole is no exception. Once completely cooled, wrap tightly in plastic wrap then aluminum foil to protect against freezer burn. Just thaw overnight in the fridge, then remove the plastic wrap before reheating.

Tater Tot Breakfast Casserole

This easy breakfast casserole is made quickly with the help of tater tots. The eggs, cheese and ham or bacon round it out for a delicious and filling start to your day.

  • 45 frozen tater tots
  • 9 eggs
  • 1 cup shredded cheddar cheese
  • ¼ pound bacon or ham cooked and crumbled or diced
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • salt and pepper to taste


  • Preheat oven to 350°F
  • Arrange tater tots in a greased 8-inch square baking dish.
  • Top with chopped ham and shredded cheese.
  • Beat the eggs. Stir in the seasonings.
  • Pour over the tater tots.
  • Bake for about 45 minutes or until eggs are fully cooked. Check the center as that will be the last place to set.
  • Cover with your favorite toppings and enjoy!
