Easy Substitutions and Additions
We love making this egg casserole with ham because it is easy. All you have to do is chop it up and toss it in.
However cooked and crumbled bacon or some browned breakfast sausage are also good. Use whichever meat you happen to have on hand or your favorite.


The cheese is another place where you can play. We like shredded cheddar, but Swiss, Colby jack, pepper jack or gouda would be delicious.

Tater Tot Breakfast Casserole
Ingredients
- 45 frozen tater tots
- 9 eggs
- 1 cup shredded cheddar cheese
- ¼ pound bacon or ham cooked and crumbled or diced
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 350°F
- Arrange tater tots in a greased 8-inch square baking dish.
- Top with chopped ham and shredded cheese.
- Beat the eggs. Stir in the seasonings.
- Pour over the tater tots.
- Bake for about 45 minutes or until eggs are fully cooked. Check the center as that will be the last place to set.
- Cover with your favorite toppings and enjoy!
