Crockpot Chicken Parmesan Sandwiches

Crockpot chicken Parmesan sandwiches a perfect dinner for busy nights. The chicken cooks in the slow cooker all day so all you have to do is shred it and assemble the sandwiches when you get home.

Sandwich made from bun, provolone cheese, and shredded marinara to make a tasty chicken parm sandwich with a crockpot filling.

Imagine tender shredded chicken, slow cooked in marinara and then piled high on toasted garlic bread buns with a bit of melted cheese. Then stop imagining it, and make some.

This easy recipe is great for those nights when you know things are going to be hectic. You can let the chicken cook while you go about your day.

When you are ready to eat, all you have to do is toast the buns and shred the chicken. Of course, you can even skip those steps if you want.

But we highly recommend taking the few minutes to do it. Toasting the buns help them to hold up to the moisture of the chicken.

If you want even more of a moisture barrier, you can always melt cheese above and below the chicken. We love cheese, so more is never a bad thing.

Why You’ll Love This Recipe

There is practically no measuring. In fact, if you cook like I do most of the time and measure things like garlic and oregano with your heart, there is no measuring.

The preparation involves only putting some chicken in a crockpot, adding marinara sauce and a few seasonings and letting it cook.

When it’s done, shred the meat with a couple of forks. You don’t even need to shred it very fine, just enough to make it easier to divide amongst the sandwiches.

Toasted garlic butter buns, need I say more? That is enough to talk my boys into eating just about anything.

This recipe is really economical. You can feed a whole family with just a few chicken breasts and have some leftover.

We like using sliced mozzarella or provolone because it makes assembly easy. However, you can use fresh mozzarella or shredded cheese if you prefer.

The whole idea is to keep things easy for yourself, so whatever you have works. Use what you like.

Crockpot Chicken Parmesan Sandwiches

These chicken Parmesan sandwiches are a perfect busy night dinner. The chicken cooks in the slow cooker all day so all you have to do is shred and assemble when you get home!
Prep: 15 minutes
Cook: 8 hours 10 minutes
Total: 8 hours 25 minutes

Ingredients 

  • 2 lb. skinless boneless chicken breasts
  • 24 oz jar of your favorite spaghetti sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 8 hamburger buns or hoagie rolls
  • 2 Tablespoons butter
  • ½ teaspoon garlic salt
  • 8 slices provolone

Instructions 

  • Season chicken breasts with salt and pepper and place in slow cooker. Pour sauce over chicken and sprinkle with garlic powder and oregano. Cook on low for 6-8 hours or high for 4.
    2 lb. skinless, 24 oz jar of your favorite spaghetti sauce, ½ teaspoon garlic powder, ½ teaspoon dried oregano
  • Preheat oven to 350°F. Place open buns, cut side up on a baking sheet. Melt butter and stir in garlic salt. Brush over bun faces. Place in oven and cook until lightly toasted, 5-10 minutes.
    8 hamburger buns or hoagie rolls, 2 Tablespoons butter, ½ teaspoon garlic salt
  • Shred chicken with a couple of forks. Then mound on top of the bottom halves of the burger buns. Top with a slice of cheese and place back in the oven to melt the cheese, this should take only a couple of more minutes.
    8 slices provolone
  • Dinner is ready!

  2. If I use chicken tenders, would I need to make an adjustment to the cooking time?

    1. You could probably get away with cooking them for a little less time, but they will be fine if you cook them for the recommended amount of time.

  6. Hi Carlee, my slow cooker is rarely put away I use it so often. Saying that though I have never, ever cooked anything pullable in it and I do keep meaning to. Everytime I read one of your pulled meat recipes I think I must give that a go, but never quite get there… My favorite slow cooker meal has to be soup. The slow cooking brings out the flavours perfectly.
