One Pan BBQ Pulled Pork and Rice Skillet Supper

This one pan BBQ pulled pork and rice skillet supper is a flavorful way to turn leftover pulled pork into a whole new meal. The best part is that you will have very few dirty dishes after making a meal your whole family will love.

This one pan dinner is a great way to use up leftover pulled pork.  The rice soaks up so much flavor as it cooks and there are almost no dirty dishes. 

This recipe gets dinner on the table quickly and is a delicious way to feed your family.

Have you figured out by now we are pork people?  I know I have gone over my love of pulled pork many times.  I love how easy and versatile it is.

What I love even more is playing with the leftovers.  I have turned them in enchiladasBrunswick stew, even enchiladas in a delightful creamy cheese sauce.  All of which are delicious.

But sometimes you just don’t want the hassle of a bunch of dishes, yet you are just not in the mood for another pulled pork sandwich.  What’s a person to do?

 I have the solution.  It just takes one skillet, a few pantry ingredients and some leftover pork.

It combines some Tex-Mex Flavors with BBQ for another Mexi-Q dish that is sure to be a hit. The best part is that it comes together quickly and the cleanup is just as quick.

The only thing I love more than a good pulled pork recipe is a quick and easy dinner recipe.  You know, the kind that you can start when you get home from work and still have dinner on the table before your family chases you down like a pack of hungry wolves! This is definitely one of those. 

Other than a little chopping and stirring, there is very little effort required. When you put that skillet full of goodness down on the table and they smell the BBQ and see the golden melty cheese, everyone’s appetites will be ready to scarf it down!

What do I do if I don’t have leftover pulled pork?

You can buy tubs of pulled pork at most grocery stores.  Or cook a pork shoulder and pull it just for the leftovers!

If you have some leftover bbq pork steak, you can chop them up and toss them in. They would work great!

Of course you can also use leftover chicken.  Either some grilled chicken, or just cook up some chicken breasts in the instant pot if you’d like. Then chop or pull them and toss them in this recipe instead of using pork.

In short, do whatever you need to do to get this dinner on the table! It is a flavorful meal that is sure to get gobbled up.

BBQ Pulled Pork and Rice Skillet Supper

Turn leftover pulled pork into a fabulous Mexi-Q dinner dish with this one pan recipe. The shredded pork and rice cook with veggies and barbecue sauce to make a easy and delicious meal.
Prep: 10 minutes
Cook: 30 minutes
Total: 40 minutes

Ingredients 

  • 1 Tablespoon vegetable oil
  • ¾ cup bell pepper diced
  • ½ cup onion diced
  • 2 teaspoon garlic powder
  • cups pulled pork
  • 1 cup rice
  • 2 cups water
  • 14.5 oz can diced tomatoes undrained
  • 15 oz. can black beans drained and rinsed
  • 1 cup corn kernels
  • ¾ cup BBQ sauce
  • ½ cup shredded cheddar cheese
  • green onions or cilantro for garnish

Instructions 

  • Heat 1 Tablespoon vegetable oil in large skillet over medium heat. Add ½ cup onion, ¾ cup bell pepper and 2 teaspoon garlic powder and cook until they start to soften. Season with a pinch of salt and some black pepper
  • Add the 1½ cups pulled pork and 1 cup rice to the skillet with the vegetables. Cook for a couple of minutes, stirring occasionally, until the rice is lightly toasted.
  • Stir in 2 cups water, bring to a boil and then simmer for about 20 minutes. Add a little more water if necessary to keep it from drying out.
  • Once rice is al dente, stir in 15 oz. can black beans, 1 cup corn kernels, 14.5 oz can diced tomatoes, and ¾ cup BBQ sauce.
  • Top with ½ cup shredded cheddar cheese and cook until cheese begins to melt.
  • If you'd like (and you have an oven safe skillet), broil until cheese is bubbly and starting to brown.
  • Garnish as desired. A few ideas include green onions, cilantro, hot sauce, diced tomatoes, and/or lime wedges.

Notes

  • I usually use defrosted frozen corn, but you can use drained canned corn or fresh corn if you prefer.
  • Store leftovers in an airtight container in the fridge for up to 4 days.

    I made this but went a different direction. Did all you did but instead of BBQ, I used taco seasoning and made it a Mexican bake. Yummy. Family loved it.

    I made this tonight and the only thing that I did differently was using some cooked, leftover yellow rice that I had in the fridge. I sauteed the veggies and then just added everything else in and it was fantastic! My husband and I loved it and we will be making it again…and soon!

    Made this tonight and not sure if it was the ban I used but my rice still has a crunch but the flavor is spot on I used a bbq seasoned pork roast from Aldi we had sandwiches the first night and this the next night not bad for the $4 and change I paid for the roast just gotta figure out where I went wrong on the rice 😁

    1. Well shoot. I am glad you liked it, but I am sure it would have been better with the rice cooked through. I am sure if you add a little more liquid and cook it a bit more, the crunch will go away.

    Wonderful different meal! I was worried the rice or bbq sauce would overwhelm, but that wasn’t the case. Nice balanced meal. Tomorrow I’m going to wrap it in a tortilla and put it in the air fryer. Thank you! This is added to our normal rotation!

  8. Do you have any recipes for 1 – 2 servings? I’m 74 and live alone and while your recipes are very tasty I have way to many leftovers.

    1. I don’t have very many. I am the oldest of 6 kids, so I learned to cook for an army early and we like leftovers. A lot of the recipes freeze well, so you can freeze single servings for easy meals later. I will try to come up with some smaller recipes in the future.

  9. A couple questions:
    The rice is uncooked when adding yo the pan, will it brown?
    Adding water to a pan with meat seems wrong?

    1. The rice won’t brown, I just like to let it cook for a minute or two before I add the liquid. The edges get a bit translucent, but it shouldn’t take on any color.
      You need to add the water to cook the rice. Everything cooks together to make an extra tasty meal. It isn’t that much different that cooking a paella or something similar.
