I have been thinking about making this for quite some time. I loved the idea of mixing creamed spinach and creamy macaroni and cheese.
So, when my husband said he wanted to grill some steaks I decided this was the perfect opportunity to give it a try. I mean if steak houses are famous for serving creamed spinach with their prime rib, wouldn’t this be a great down home spin on that idea? Yes! Yes, it is!
Somehow I failed to get a picture of my husband’s steak. He got himself a 23 oz T bone.
Because who doesn’t need 23 oz of beef for dinner? He asked if I wanted one too, but I knew I had to live through the evening so I asked him to get me something a little more reasonable.
Little Dude loved the macaroni and cheese. Cheese and pasta are two things I can usually count on him eating, so it is a convenient cover to get him to try some green vegetables as well.

Creamed Spinach Macaroni and Cheese
Ingredients
- 6 oz pasta
- 1 can cream of mushroom soup
- 1 cup milk
- 4 oz mozzarella
- 4 oz cream cheese
- ½ teaspoon pepper
- ½ teaspoon garlic
- 10 oz frozen chopped spinach
- ⅛ teaspoon nutmeg optional
- ¼ cup grated Parmesan
Instructions
- Cook pasta to al dente according to package directions and drain.6 oz pasta
- In a large saucepan over medium-low heat, begin to heat up the soup and milk. Stir in the cream cheese and mozzarella and cook until cheeses are melted and the mixture is smooth.1 can cream of mushroom soup, 1 cup milk, 4 oz mozzarella, 4 oz cream cheese
- Add the seasonings, spinach and pasta. Stir to coat.½ teaspoon pepper, ½ teaspoon garlic, 10 oz frozen chopped spinach, 1/8 teaspoon nutmeg
- Remove from heat and stir in the Parmesan cheese.¼ cup grated Parmesan
