Andi's slow cooker chicken and rice is an easy meal that requires almost no prep work. It cooks while you go about your day. All you have to do is add a vegetable and dinner is ready.
Spray slow cooker insert with nonstick cooking spray.
Stir together 1½ cups long grain rice, 3 cups water, 1 1 oz. packet dry onion soup mix, ½ teaspoon garlic powder, ½ teaspoon ground black pepper, 1 10.5 oz. can cream of mushroom soup, and 1 10.5 oz. can cream of chicken soup in slow cooker.
Layer 2 pounds chicken breasts on top of rice mixture.
Cook on low for 5-7 hours or high for 3.5-4 hours. Check to make sure the rice is cooked to you liking and the chicken is 165°F before serving.
Serve chicken over rice or shred it and stir it in.
