Vintage Poor Man's Cake is a delicious blast from the past. It is a simple spiced raisin cake made with pantry staples you likely already have on hand. The batter comes together right in a saucepan, bakes up in a 9×13″ pan, and finishes beautifully with a dusting of powdered sugar or a simple glaze. In a large saucepan, bring 1 cup granulated sugar, 1 cup water, 1 cup raisins and ½ cup butter to a low boil. Simmer for 10 minutes and then remove from heat to cool slightly.
Meanwhile preheat your oven to 350°F and grease a 9x13 inch pan.
Whisk in ¼ teaspoon salt, 2 cups all purpose flour, 1 teaspoon baking soda and 1 teaspoon pumpkin pie spice.
Spread batter in prepared pan and bake for 20-25 minutes or until top is springy when lightly touched with a finger.
Dust with powdered sugar or drizzle with powdered sugar glaze. For an extra special treat, cool and top with cream cheese frosting.
