Soft and delicious pumpkin baked oatmeal with a maple cream cheese swirl. This is a hearty fall breakfast that is packed with the good stuff and will remind you of your favorite pumpkin roll cake.
Preheat oven to 350°F and spray an 8-inch baking dish with nonstick spray.
In a medium mixing bowl, beat together the pumpkin puree, syrup, and eggs until smooth.
Stir in the remaining baked oatmeal ingredients and pour into greased dish.
In a small bowl, beat together cream cheese, egg and maple syrup.
Dollop bits of the cream cheese mixture over the pumpkin oatmeal and swirl with a knife.
Bake for 40-45 minutes or until just set.
Allow to cool for 10-15 minutes before serving.
Store leftovers in the refrigerator.
Notes
*This recipe as written is only lightly sweet as written, for a sweeter oatmeal either increase the maple syrup to 1/2 cup or add a few tablespoons of brown sugar.
