Sheet Pan Kielbasa with Sweet Potatoes and Green Beans
Sheet pan kielbasa with sweet potatoes and green beans is an all in one meal that is packed with flavor. Everything cooks together so the sausage gives the veggies great flavor and the cleanup is super easy.
Preheat oven to 425 °F. Line sheet pan with parchment paper if desired for easy cleanup.
Mix together oil, onion powder, garlic powder, salt and pepper. Set aside.
Clean and trim green beans. Dice sweet potatoes into bite sized cubes, about ¾ inch.
Put green beans and sweet potato chunks on sheet pan, drizzle with seasoned oil. Toss to coat.
Cut sausage into 1-inch slices. Arrange over veggies on sheet pan.
Cook for 25-30 minutes or until the sweet potatoes are tender.
Notes
Use an oil with a high smoke point like avocado oil, or vegetable oil. Experiment with using different kinds of sausage to change the flavor profile.You can also change out the vegetables. Regular potatoes, carrots or butternut squash works in place of the sweet potatoes. Try using brussels sprouts in place of the green beans.
