Red velvet truffles are such a quick and easy treat that bring such color and flavor to your dessert menu. These fudgy little bites are perfect for Christmas, Valentine's Day or just because.
Place 2 cups white chocolate chips and the 14 oz can sweetened condensed milk in a large microwave safe bowl. Microwave in 25-second intervals, stirring between each, until chips are melted and mixture is smooth.
Stir in ¾ cup red velvet cake mix and 1 teaspoon vanilla extract until color is uniform.
Place the bowl in the freezer for 30 minutes or until it is able to be scooped and holds its shape.
Using a small cookie scoop, scoop about 1 Tablespoon of truffle mixture.
Roll the scoops into smooth balls. Place them on a baking sheet that has been lined with parchment paper.
Melt remaining ½ cup white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring often.
Transfer melted chips to a small pipping bag or plastic baggie.
Cut a small corner off of the bag and drizzle the melted chips over the truffles, adding the sprinkles before it hardens.
Notes
You can dip the truffles in melted chocolate instead of drizzling them if you prefer.
Try using different cake mixes for different flavors of truffles.
Truffles like these can be stored in an airtight container at room temperature for 2-3 weeks. For longer storage, freeze for up to 3 months.
