Line a 8x8 baking dish with parchment paper and set aside.
Toast the 2 cups chopped pecans in a large skillet over medium to medium-low heat. Stir frequently and pull them off the heat once you can smell them toasting. Set aside.
Stir together the ⅓ cup evaporated milk and ½ cup dark corn syrup in a large microwave safe bowl. Microwave on high for 3 minutes.
Immediately add the 3 cups white chocolate chips and stir until completely melted.
Stir in the 1 teaspoon vanilla extract, ¼ teaspoon maple extract, and ¼ cup powdered sugar. The mixture will be thick.
Spread in the lined 8x8 and sprinkle the toasted pecans on top, lightly press them into the fudge so that they adhere.
Chill in the fridge for 2 hours to set. Remove from the pan and cut into squares.

Fudge should be stored in an airtight container. It holds well on the counter at room temperature and will last there for at least a week. For longer storage, put your airtight container in the refrigerator for up to 3 weeks. You can even freeze it for several months of storage.
