Peaches and cream baked oatmeal is a perfect breakfast option. It is soft and flavorful. Make it on the weekend and eat the leftovers throughout the week.

Ingredients

cup
milk
½
cup
plain yogurt
or vanilla yogurt
2
eggs
¼
cup
brown sugar
or honey or maple syrup
1
teaspoon
vanilla extract
1½
cups
old fashioned oats
¼
teaspoon
ground ginger
¼
teaspoon
ground cinnamon
1
teaspoon
baking powder
1
pinch
salt
1½
cups
peaches
diced
Instructions
Preheat oven to 350°F and spray a square baking dish.
In a mixing bowl, combine
1 cup milk
,
½ cup plain yogurt
,
2 eggs
,
¼ cup brown sugar
, and
1 teaspoon vanilla extract
.
Stir in
1½ cups old fashioned oats
,
¼ teaspoon ground ginger
,
¼ teaspoon ground cinnamon
,
1 teaspoon baking powder
, and
1 pinch salt
.
Fold in
1½ cups peaches
and pour into greased pan.
Bake for 35-40 minutes or until set.
Allow to cool slightly before serving.
Notes
This recipe works great with fresh peaches (use 2 good sized peaches.) You can also use frozen peaches or even drained canned peaches.
Cover the leftovers and store in the refrigerator. They reheat well in the microwave.
