All of the flavors of lasagna cooked in one skillet on the stove. One pot skillet lasagna makes it possible to get it done on a weeknight and without a ton of dishes!
In a large skillet or dutch oven, brown 16 ounces Italian Sausage.
Drain off most of the grease and then add 1 onion and cook until translucent and softened.
Stir in the 1 teaspoon garlic powder and ½ teaspoon dried oregano. Then add the 36 ounces marinara sauce, 1½ cups water or chicken stock and 16 ounces pasta. Stir to combine.
Bring to a boil and then drop to a simmer and cook covered for about 20 minutes. Be sure to stir the mixture occasionally to help the pasta cook evenly. Add a little more liquid if needed and cook until the pasta is done to your liking.
Stir in the 1 cup cottage cheese and top with 1 cup mozzarella. Cover and cook until cheese is melted, then serve.
