In a large skillet with a lid, cook 1 pound ground beef, 1 small onion and 2 jalapenos over medium heat until the meat is browned and the onions are translucent.
Add the 1 package taco seasoning and 1 cup long grain rice. Stir to coat everything with the seasoning and let the rice toast for a minute or two.
Add the 1 cup salsa and 2 cups water, bring to a simmer. Cover and simmer for about 20 minutes. Stir it about 15 minutes in and add additional water if necessary.
Stir in 14 ounce can black beans.
Sprinkle 1 cup cheddar cheese over the top, cover and let melt for a minute or two.
