This luscious no bake chocolate cheesecake is super rich and creamy thanks to a can of sweetened condensed milk and plenty of melted chocolate. It is super simple to make and tastes great.
Place 1 cup chopped chocolate or chocolate chips in a microwave safe bowl. Melt using 20-30 second bursts, stirring after each until it stirs smooth. Set aside to cool slightly.
In a medium bowl, mix 16 oz. cream cheese on low speed until it is creamy and lump free. Be sure to scrape the sides of the bowl and the beater a few times along the way.
Slowly add 14 oz. sweetened condensed milk, mixing on low after each addition until it is incorporated fully.
Stir in ⅓ cup sour cream until incorporated.
Mix in the melted chocolate until uniform.
Spoon the chocolate cheesecake mixture into the prepared 1 Graham cracker crust.
Chill for at least 4 hours, though longer is better, before serving.
Notes
An Oreo crust also works really well with this cheesecake pie.
You can also freeze this cheesecake and serve it from frozen. It still has a really nice creamy texture and cuts into pieces nicely.
