Monster cookie mix in a jar is a great way to shortcut making some of our absolute favorite cookies. Make up several jars to keep in your pantry or give them as gifts to teachers, neighbors, family and friends.
In a small bowl, stir together the ½ cup granulated sugar, 1 teaspoon baking soda, and ½ teaspoon salt. Pour into the bottom of a quart jar.
Layer on 1 cup of the rolled oats.
Continue layering, adding the ¾ cup M&Ms, ½ cup light brown sugar, and ¼ cup chocolate chips. Pack the layers down as you go to make sure there is enough room for everything.
Finish with the remaining 1¼ cups of oats.
Place the lid on the jar and tie a tag onto the jar with the baking instructions.
Making The Cookies
Preheat the oven to 350℉.
In a medium bowl, cream together the ¾ cup peanut butter and 2 Tablespoons butter.
Add the 1 teaspoon vanilla extract and 2 large eggs. Stir to combine.
Pour in the contents of the jar and stir until the mixture is uniform. It should form a thick dough.
Scoop a rounded Tablespoon of dough onto a cookie. Continue scooping the dough, leaving 2 inches between each mound of dough until the sheet is full. Bake for 9-11 minutes.
Cool for a couple of minutes on the tray before moving to a wire rack to cool completely.
Notes
These homemade mixes can be kept in the pantry for 6-9 months. So you can make a bunch ahead of time if you would like.You can use all M&M or all chocolate chips if you want to. I like having a bit of color, but also like using some mini chocolate chips to distribute chocolate throughout. If you like nuts or raisins in your monster cookies, you can use them in place of the extra chocolate chips.
