Start your day off right with this maple banana baked oats recipe. The texture is soft and the flavor is delicious. It is a tasty and nutritious way to enjoy breakfast.
In a large mixing bowl slightly mash the 3 bananas (some lumps are fine.) Mix in 2 eggs until well incorporated.
Stir in 1 cup yogurt, 1 cup milk, 2 teaspoons ground cinnamon, 2 teaspoon baking soda, ¼ cup maple syrup, and 2½ cups old fashioned rolled oats until they are evenly mixed.
Pour into a greased 8 or 9 inch square baking dish.
Bake for about 45 minutes or until the center is set.
Serve warm or at room temperature. Drizzle with more maple syrup or a dollop of yogurt if desired.
Notes
You can use honey instead of maple syrup of you prefer.
