Turn extra hot chocolate mix into an easy and creamy hot chocolate pudding. This recipe only requires 3 ingredients (4 if you count the water) and is ready in less than 10 minutes.
In a medium to large sauce pan, whisk together 1 cup hot chocolate mix and 4 Tablespoons cornstarch.
Add 2 cups milk and 2 cups water, whisking until the powder is dissolved.
Cook over medium heat until the mixture starts to bubble. Be sure to stir frequently to avoid lumps or scorching. When the mixture is thick enough to coat the back of a spoon, remove it from the heat.
Spoon the thickened chocolate mixture into serving dishes. Enjoy warm if desired or refrigerate until chilled through. Place plastic wrap on the surface to avoid a skin forming.
Top with whipped cream, sprinkles, or marshmallows if desired.

Keep leftover pudding in an airtight container in the refrigerator for up to 4 days.
