Grandma's Prune Brownies
My grandma's prune brownies recipe still gives you great brownie texture with the addition of chopped prunes. So if you need to get more prunes in your diet, why not bake them into brownies?

Ingredients
1
cup
prunes
1
ounce
bittersweet chocolate
⅓
cup
butter
or shortening
2
large eggs
1
cup
granulated sugar
1
teaspoon
vanilla extract
¾
cup
all-purpose flour
½
teaspoon
salt
½
teaspoon
baking powder
Instructions
Preheat oven to 350℉ and grease an 8 or 9-inch square pan.
Finely dice
1 cup prunes
. If they feel at all dry, soak them in some warm water and drain before using.
Melt together the
1 ounce bittersweet chocolate
and
⅓ cup butter
. You can do this in a double boiler or the microwave. Allow to cool slightly.
In a medium bowl, beat the
2 large eggs
. Gradually beat in
1 cup granulated sugar
. Stir in the
1 teaspoon vanilla extract
and chocolate mixture.
In a small bowl, stir together the
¾ cup all-purpose flour
,
½ teaspoon salt
, and
½ teaspoon baking powder
.
Stir the dry ingredients into the wet ingredients. Mix in the prunes.
Transfer batter to prepared pan. Bake 35-40 minutes.
Cool then cut into squares and serve.
