Stir together 1 box cake mix, 2 large eggs, and melted ½ cup butter. Fold in 2 Tablespoons Jimmies or large sprinkles until evenly distributed. Press into a 9×13-inch cake pan.
In a medium mixing bowl, beat 8 oz cream cheese until smooth.
Add 2 large eggs, 2½ cups powdered sugar, and 1 teaspoon vanilla extract. Mix until smooth. Spread over crust in pan.
Distribute ⅓ cup jimmies or large sprinkles over the filling.
Bake for 25-30 minutes, or until set. Let cool before serving.
Notes
You can use a funfetti cake mix for the most sprinkles. Or use a white, or yellow cake mix. You can also experiment with other flavors if you would like.
Gooey butter bars stay good at room temperature for up to 4 days, or a week in the refrigerator. Make sure to cover it tightly to keep it from drying out. You can freeze it for up to 3 months. Freeze individual slices if you don't want to have to defrost the whole thing later.
