Crockpot pork chops with apples and stuffing are the epitome of fall. The seasoned pork chops are cooked until tender under a layer of apples and cornbread stuffing. It is an easy dinner that is perfect for a busy weeknight.
Mix together 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon paprika, and 1 teaspoon poultry seasoning and sprinkle over both sides of the 8 boneless pork chops.
In a large skillet over medium high heat brown the pork chops on each side. Don't cook them through, just get a little color on the exterior.
Place the pork chops in bottom of the slow cooker.
Next distribute the 21 ounce can apple pie filling over the pork chops.
Stir together the 6 ounce box cornbread stuffing and 1½ cups chicken stock. Spread in an even layer over the apples.
Dot the top of the stuffing with 4 tablespoons butter.
Cover and cook on low for 4-6 hours until the pork chops are tender.
