If your sausage is in links, remove the meat from the casings.
Set Instant Pot to sauté. Add 1 lb. Italian sausage and ½ yellow onion, diced.
Cook until the onions are translucent and the sausage is browned. Feel free to leave the sausage in bigger chunks if desired.
Add the 7 cups chicken broth, 19 oz cheese tortellini, 1½ teaspoons garlic powder, 1 teaspoon salt, 1 teaspoon ground black pepper, 2 teaspoons Italian seasoning, and 8 oz. fresh spinach. Close and seal the lid and pressure valve. Cook on high pressure for 4 minutes
Quick release pressure and remove lid. Stir in 2 cups half and half and ½ cup grated Parmesan cheese and let cool and thicken.
Serve with additional Parmesan cheese if desired.
Notes
You can use 2 cups of milk mixed with a generous teaspoon of cornstarch if you don't have half and half. Just bring the mixture to a light boil to thicken before serving.
