If you are looking for a simple and delicious candy to make, these classic cream cheese mints are just the thing. They are creamy, sweet, and have a nice pop of mint flavor. This batch is ready for Christmas, but you can make them any color for any occasion.
Beat the butter until smooth and lump free. Add the cream cheese and beat until combined and fluffy.
Add 4 cups of powdered sugar and mix until combined.
Stir in the peppermint extract and vanilla.
Add the remaining 4 cups of powdered sugar and mix until combined. The mixture should be stiff and not sticky. If it is still sticky, add a little bit more powdered sugar until it has a playdough consistency.
If desired, divide the cream cheese mint mixture into several small bowls and dye them various colors with food coloring gel.
For round mints, roll about a teaspoon of the candy between your palms to form a ball. Place on a sheet of wax paper. Dip the tines of a fork in powdered sugar and press slightly into the top to form a disk.
For molded mints, roll an appropriate amount of the candy in a bowl of granulated sugar. Press into the mold and then remove and place on a sheet of wax paper to set up.
Allow the mints to dry out at room temperature for several hours before putting in an airtight container for storage. When storing, place a sheet of wax paper between the layers of mints in the container.
Notes
Make sure you use brick style cream cheese, not the spreadable cream cheese that comes in a tub.
