Make chewy and delicious cranberry oatmeal cookies with this homemade mix. The mix is easy to make and you can keep it in your pantry or give it as a yummy homemade gift.
Layer the 1 cup old fashioned rolled oats, ¾ cup dried cranberries, and ¾ cup white chocolate chips in the bottom of a quart jar. Press down to make room for the remaining ingredients.
Add the ⅔ cup light brown sugar and pack down a bit to form an even layer.
In a small bowl, stir together the 1 cup all purpose flour, ½ teaspoon ground cinnamon, ¼ teaspoon salt, ½ teaspoon baking powder, and ¼ teaspoon baking soda. Layer on top of the brown sugar.
Place the lid on the jar and tie a tag onto the jar with the baking instructions.
Homemade cookie mix can be kept in the pantry for 6-9 months. So you can make a bunch ahead of time if you would like.
To Make The Cookies
Beat together the ½ cup softened butter, 2 large eggs, and 1 teaspoon vanilla extract.
Add the contents of the jar and mix until combined.
Chill the dough for at least 30 minutes, but up to 2 days.
Preheat the oven to 375℉. Place 1 Tablespoon scoops of dough (or a small cookie scoop) about 2 inches apart on a cookie sheet.
Bake for about 8 minutes. Cool for a couple of minutes on the tray then move to a wire rack to cool completely.
